I think that DVD framesize should be enough to make picture collages/designs. At least for the videos and the menu.

Actually I think there's software that's supposed to do exactly that, like a voice dictation machine. Let's just hope it doesn't behave like babelfish.altavista.com !

The K6 is a modular set of mics that are absolutely wonderful for field use. I have a K6 module with a me63 and me67 depending on what I need. The me63 has a somewhat wide pickup pattern which I use for general stuff, while the me67 is a "shotgun" mic, which basically filters out everything except where you point it. It's absolutely awesome for recordings in a non-studio environment. I've gotten some very good recordings out of it from pretty bad environments.. Downside is that they are a bit costly. The K6 module will go for around $200-300 and a mic will go for around the same. I got a K6 and me67 shotgun mic used at the local music store for like 250, which was an exceptional deal. They are sensitive and pick up sound really well but are also very sturdy, they don't overreact to sudden noises.
I use them for my field recorder, but they are also very popular mics for video cameras, widely acclaimed.
Currently I also use two Rode NT3s for stereo recordings. They are reasonably small condenser mics that sound absolutely wonderful. They are comparatively cheap, and I got mine for around $180 a piece (And you probably just need one)

Only drawback is that they are rather sensitive to wind, so you need a thick windshield for them for outdoor use. But man are they crisp! Made a test recording outdoors by recording a train leaving the station. They tend to be somewhat loud. But there was a light swishing sound that ruined the recording.. It was a lady with snow pants walking 100 yards away! lol

I can't find any specific name or price on that one, but a shotgun mic with cables and foundation for a video camera sounds perfect for many of your recording situations.
If you ever decide to record something while in Europe or if I come to Canada, I'll bring a microphone boom and be your audio-slave throughout the recording.

Are you sending the diet lesson too? Unless it's completely mangled beyond recognition I might be able to restore it. My software allows me to go in an remove the tinest things, even take syllables from one word and merge them into another. But only to an extent of course. After that it'll be what my co-worker Johan calls "turd-polishing"

LOL! I was joking about it! But hey, you definitely have a point with it. Say have a fun-section for the class.. After all part of what you are teaching is to have a laugh about it along the way.
